A native of Ohio, where corn remains a matter taken quite seriously, Chef Sam is responsible for many of La Fleur’s decorative peculiarities. She spends a good deal of time designing various things of unclear necessity but considerable charm, occasionally pausing to rearrange objects others had previously considered perfectly acceptable.
She maintains a close watch on Chef Kevin’s work, ensuring that no pastry leaves the kitchen without appropriate tastings.
On rare days off she prefers making things that tend to appear around the house without prior approval. And, she can usually be found in the company of her close associates, Gus Gus and Pinky, who share in her steadfast and enthusiastic relationship with highly questionable television programs.

Chef de Cuisine
Raised among the waterways and crab houses of Maryland, Chef Kevin brings a steady hand and a meticulous eye to the kitchen. When not overseeing the stoves, he may be found cycling considerable distances, perfecting pastries at home, or debating matters of national importance while watching Rachel Maddow.
During visits to Carmel, he is known to make regular rounds to several favorite establishments, conducting informal research with the local chocolate situation.
On his days off he prefers the quiet company of his trusted companion, Maddox, with whom he conducts long walks, thoughtful discussions, and the occasional fist shaken at passing clouds.

Maddox
Saucier
A long-serving and highly vocal member of the staff, Maddox has served as the loyal guardian of La Fleur for many years. Nothing leaves the kitchen without first passing under his careful supervision, and he maintains a strict policy of inspecting all cuisine with great seriousness and of course, a mandatory taste for quality.
On days off he can usually be found patrolling the surrounding neighborhood and checking in on what he considers his personal real estate holdings with his best pal, Kevin.
He has also made it his unofficial duty to keep a watchful eye on the more unpredictable members of staff, Gus Gus and Pinky, a responsibility that requires both vigilance and, on occasion, remarkable patience.

Pinky presides over the dining room at La Fleur, where very little escapes her attention. Maddox maintains that he keeps an eye on her, a belief the rest of the staff politely allows him to keep.
She moves through the establishment with notable stealth and grace, quietly securing advantageous arrangements while maintaining impeccable standards of beauty and hygiene. To remain in proper form, she commits herself to twice-daily feather exercises, which she approaches with admirable athleticism.
Pinky divides her time between greeting guests, supervising the kitchen, and keeping a discreet watch over the rest of the staff, including the house’s newest sommelier, Gus Gus, whose professional focus occasionally requires a gentle nudge back to wakefulness.

Sommelier
Gus Gus serves as the house sommelier at La Fleur. Though an impressively large fellow, he remains unaware of both his size and strength and continues to conduct himself with the gentle optimism of someone who believes he is half his size.
He greets every guest as though they are an old friend returning after a long absence, and many leave the restaurant with the feeling they have known him for years. Possessing the most serious of expressions, Gus Gus is nevertheless the sweetest and most agreeable creature in the establishment.
When not attending to guests, he can often be found enjoying a well-earned snack, dreaming of the outdoors, or accepting direction from Maddox, who has taken it upon himself to supervise him with great enthusiasm.
